Select this option if you want to pick your own cuts, how they are cut, and so forth. You pay us for the meat itself, listed below, and then pay the butcher for the processing (or we can take care of that and you pay us this as well). We go by the Hanging Weight of the animal, which is the weight after it is processed (skinned and cleaned) but before it is cut up.

 

Hanging weight can vary, animals can be larger or smaller than others.

 

We will need to get ahold of you for this option so we can fill out our cut sheet and convey any other information.
